Today is Shrove Tuesday, AKA Pancake Day, so it’s time to get out your favourite frying pan and stock up on lemon juice and Fairtrade sugar. Read on for recipes and the difference Fairtrade Premiums make to sugar cane growers.

20g Co-op unsalted butter, melted and cooled, plus extra for greasing

The difference Fairtrade makes to sugar cane growers
Belize Sugar Cane Farmers Association (BSCFA) was Fairtrade certified in 2008 and has a membership of more than 5,000 cane growers.
Since becoming certified, the BSCFA has received approximately $3.5m a year in Fairtrade Premiums. These Premiums have enabled them to both transform the way they harvest and deliver sugar cane, leading to better produce quality and yield, and invest in their local community.
Alfredo Ortega, Vice Chair of the Management Committee for the BSCFA, says, “Fairtrade is like a door to a great opportunity within our community. Investment in a range of projects in the technical support programme is helping cane farmers produce a higher quantity and quality of sugar cane, with a positive impact on the incomes of producers. Through the social programme, Fairtrade can help us promote education and build schools, health centres, clinics and much more. For us, Fairtrade has been a new beginning and also encourages a strong future in the sugar industry.”
